- 2 tsp fresh lemon juice
- 2/3 cup milk
- 2 tbsp yogurt
- 2 eggs
- 2 tsp vanilla extract
- 2 1/3 cup all-purpose flour
- 1 1/3 cup brown sugar
- 1 1/4 tsp baking powde
- 1 tsp baking soda
- 1 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 2/3 cup butter
- 2/3 cup fully ripened mashed bananas
Preheat oven to 350F.
Add yogurt and lemon juice to milk.
Cream sugar and butter in a mixer.
Add bananas, eggs, milk mixture and vanilla.
Add baking powder, baking soda, salt, cinnamon and nutmeg to flour.
Slowly add this mixture to the ingredients in the mixer until all dry ingredients are incorporated. Beat vigorously for 2 minutes.
Bake in a greased bundt pan for 35 minutes or until a toothpick or skewer comes out clean.
