Braised Beef Short Ribs (video)

  • 3 lbs boneless beef short ribs cut into 1 ½” pieces
  • ¼ cup dark brown sugar
  • 1 tsp cumin
  • 1 large red onion (roughly chopped)
  • 4 cloves garlic (minced)
  • 2 large carrots (roughly chopped)
  • 2 celery stalks (roughly chopped)
  • 1L low-sodium beef stock
  • 1 cup water
  • 1 cup red wine
  • 1 tbsp Dijon
  • 2 tbsp balsamic vinegar
  • 1 tbsp Worcestershire Sauce
  • 5 thyme sprigs
  • 2 rosemary sprigs
  • 3 tbsp vegetable oil
  • 1 small red chili (rough chopped)


  1. Pre-heat oven to 325F.
  2. In a suitable pot turn heat to medium high, and when heated, add the oil.
  3. Season the ribs generously with salt and fresh cracked black pepper and sear on all sides until deep golden brown, approximately 4-5 minutes. Remove from the pan.
  4. In the same pan add onions and sauté for one minute. Add garlic for 3 seconds, add red wine and scrape up all the bits stuck to the bottom of the pan for 1 minute.
  5. Add all remaining ingredients including the short ribs into the pan. Cover the pot with a lid and place in oven for 3-3 ½ hours or until ribs are knife tender.
  6. Remove short ribs from the pot, strain the liquid and boil the liquid in a clean pot until it begins to resemble a sauce, approximately 20-30 minutes. Remove from heat.
  7. Adjust the flavour of the sauce as desired.
  8. Plate short ribs with a generous amount of sauce.

    Looks incredible and tasty! That sauce is definitely good enough to bathe in. I love ribs and will be trying this recipe asap!
